Here's one of our favourites: the Cuban Mojito. Light, fresh and minty - ideal for those sweaty nights. Be warned, though they pack a punch!

Mojito
Ingredients
Method

8 fresh mint sprigs
1-2 tsp palm or raw sugar
1-2 fresh limes
2 shots of white cuban rum
soda water
tall glass
wooden pestel to crush mint
ice

In a premixed syrup (heat a little water, sugar until disolved then chill), crush some mint leaves until flavoured. Discard bruised leaves. Stir together the minty syrup, some fresh mint leaves and lime juice. Add ice and rum and mix. Top up with soda water and sugar to taste. Garnish with a mint sprig and a lemon slice.
